Strawberry-Banana Smoothie

While I'm on the subject of blenders, I thought I would share one of our favorite smoothie recipes. After much trial and error, here's the way we make our favorite Strawberry-Banana Smoothie. Again, this one is gluten free and casein free.

Strawberry-Banana Smoothie

1/2 cup coconut milk
1/2 cup water
6 large frozen strawberries
1/2 cup pineapple juice
2 bananas
1/2 teaspoon GF vanilla

If most of your ingredients are room temperature, you may want to add some ice cubes before blending. This recipe will make 2 large smoothies--perfect for an afterschool snack!

Nutty Blender Waffles (GFCF)

This is not your typical waffle recipe. For starters, it's both gluten free and casein free. It's also a little heavier than most waffle recipes.

We like to simply sift powdered sugar over them in lieu of any syrup. Yummy!

1 cup coconut milk

1 cup water

2 1/4 cup oats

1/2 cup peanut butter

2 tablespoons brown sugar

2 teaspoons baking powder

Just put it all in the blender and blend for about a minute. That's it! This recipe makes three Belgium waffles in my waffle maker.

You can also make the waffles ahead to freeze. Just pop them in the toaster to reheat.
