Storing Nuts



Without protection against moisture, air, and high temperatures, nuts become rubbery and their natural oils turn rancid. At room temperature, shelled nuts left uncovered will become stale in a matter of days.

Nuts should always be stored in airtight containers or bags, and the refrigerator is usually the best place to store them.

For longer storage, nuts may be stored in the freezer. However, they will loose flavor and crispness once frozen. I usually use nuts that have been frozen only for baking.

In an airtight container, nuts may be stored:

  • at room temperature for at least 3 months (depends on temperature)
  • in the refrigerator for up to 6 months
  • in the freezer for a year or more
