Super Simple Roasted Cauliflower

Here's a simple way to prepare a head of cauliflower when you want a tasty and elegant side dish.

  1. Preheat the oven to 450 degrees. 
  2. Trim a head of cauliflower into bite-sized florets.
  3. In a medium bowl, toss the florets with coconut or olive oil until lightly coated.
  4. Sprinkle florets with 1 teaspoon garlic salt, 1/2 teaspoon chili powder, and freshly ground pepper to taste.
  5. Toss the cauliflower until seasonings are well distributed.
  6. Pour the cauliflower onto a greased baking pan and bake for 20-25 minutes, stirring twice during the baking time.
  7. Cauliflower should be golden brown when done.
  8. Remove from the oven and transfer to a serving dish.
  9. Drizzle with balsamic vinegar and toss.
Keep in mind that the cauliflower reduces considerably when roasted.
