Here's a simple way to prepare a head of cauliflower when you want a tasty and elegant side dish.
- Preheat the oven to 450 degrees.
- Trim a head of cauliflower into bite-sized florets.
- In a medium bowl, toss the florets with coconut or olive oil until lightly coated.
- Sprinkle florets with 1 teaspoon garlic salt, 1/2 teaspoon chili powder, and freshly ground pepper to taste.
- Toss the cauliflower until seasonings are well distributed.
- Pour the cauliflower onto a greased baking pan and bake for 20-25 minutes, stirring twice during the baking time.
- Cauliflower should be golden brown when done.
- Remove from the oven and transfer to a serving dish.
- Drizzle with balsamic vinegar and toss.
Keep in mind that the cauliflower reduces considerably when roasted.
